Bean & Prawn Tagliatelle
This recipe will serve 4 people.
Preparation time – 20 minutes
Cooking time – 10 minutes
Ingredients
400g Tagliatelle
300g Runner Beans
1 tbsp Olive Oil
2 Garlic Cloves
2 tsp Dried Tarragon
1 tsp Wholegrain Mustard
300ml Tub Creme Fraiche
1 Fish Stock Cube
245g Cooked Prawns
150g Cherry Tomatoes
Freshly Ground Black Pepper
25g Grated Parmesan
Method
1. Bring a large pan of lightly salted water to the boil and cook the tagliatelle as per instructions and drain thoroughly.
2. Trim and slice the runner beans into aprox. 3cm chunks and boil for 5 minutes then drain.
3. Crush the gralic. Heat the oil in a small pan a cook garlic for 1 minute.
4. Add the tarragon, mustard and creme fraiche and heat very gently, do not allow it to boil.
5. Disolve the crumbles stock cube with 2 tbsp of boiling water, stir it into the creme fraich mix and add the cooked beans, prawns, tomatoes and black pepper.
6. Toss the drained pasta with your mixture and top with grated Parmesan.
