Grapefruit in Brandy

Cooking Time: 10 mins
Ingredients
4 Large grapefruit
4oz/110g Caster sugar
4 tbsp Brandy
1 tsp Ground cinnamon
Method
1. Peel and remove the pith from the grapefruit.
2. Slice the grapefruit into 1/2 inch rounds, removing the pithy centres.
3. Put the sugar and cinnamon in a large saucepan and add 1/2 pint/275ml cold water. Bring to a boil, stirring continuously until the sugar dissolves.
4. Boil the syrup briskly for 2 mins.
5. Lower the heat, add the grapefruit slices and poach for a further 6 minutes, turning half way through.
6. Arrange the grapefruit slices in a serving dish and pour over the brandy.
7. Serve hot or chilled.
