Dover Sole Fish Cushion
This recipe will serve 8 people.

Ingredients
8 Large Dover Sole Fillets
Butter
1 Finely Chopped Onion
4oz Button Mushrooms
1 Tablespoon Chopped Parsley
Salt and Black Pepper
¼ Pint Dry White Wine
7oz Prepared Puff Pastry
1 Egg Yolk
Method
1. Butter a shallow oven proof dish and spread the onion over the base.
2. Cover with the thinly sliced mushrooms and parsley.
3. Fold each sole fillet in 3 and place over the mushrooms.
4. Season with salt and pepper and pour over the wine.
5. Cover the dish with buttered greaseproof paper and bake in the center of the oven, at 350°F (gas mark 4) for about 10 minutes.
6. Remove the dish and allow to cool.
7. Roll out the puff pastry to a thickness of ? in. and divide into 16 squares.
8. Spoon the mushroom mixture over half the squares, and top with a sole fillet.
9. Moisten the pastry edges, cover each square with the remaining pastry and seal the edges firmly.
10. Brush the cushions with the egg yolk and bake them for 15-20 minutes in the center of the oven at 400°F (gas mark 6).
11. Serve the sole cushions hot with a bowl of Hollandaise sauce.
