Vanilla Butter Cake
Melted butter, to grease the cake tins
3 Cups of self raising flour
1 Cup of plain flour
2 Cups of caster sugar
300g Cubed butter
1¼ Cups of milk at room temperature
6 Eggs at room temperature
3 Teaspoons of vanilla essence.
Method
1. Preheat the oven to 140ºC.
2. Brush the cake tin with the melted butter to lightly grease. Line base and sides with non-stick baking paper.
3. Place self raising flour, plain flour, sugar, butter, milk, eggs and vanilla
essence in a large mixing bowl.
4. Using an electric beater, beat on low speed for 30 seconds or until just combined.
5. Increase the speed to high and beat for 1-2 minutes or until the mixture is thick and all the butter is incorporated.
6. Spoon the mixture into the prepared pan and smooth the surface with the back of a spoon.
7. Bake in the preheated oven for 2½ hours or until a skewer inserted into the center of the cake comes out clean.
8. Remove from oven and set aside for 10 minutes.
9. Turn onto a wire rack for 2 hours or until completely cool. Cover with icing.
