Banana Bread

This Recipe Will Serve 6 People
Ingredients

Unsalted butter
125g/4 ½oz White all purpose flour
100g/3 ½oz Light brown all purpose flour
150g/5 ½oz Demerara sugar
Pinch of salt
½ tsp Ground cinnamon
½ tsp Ground nutmeg
2 Large peeled ripe bananas
175ml/6fl.oz Orange juice
2 Eggs, beaten
4 tbsp Rapseed oil
Honey to serve

Method

1. Preheat the oven to 180C/350F/Gas Mark 4. Lightly grease and line a 450g loaf tin.

2. Sift the flours, sugar, salt and the spices into a large bowl.

3. In a separate bowl mash the bananas with the orange juice, then stir in the eggs and oil. Pour this mix into the dry ingredients and mix well.

4. Spoon the mixture into your prepared loaf tin and bake in the preheated oven for 1 hour, and then test to see if it is cooked by inserting a skewer into the center. If it comes out clean the loaf is done. If not, bake for a further 10 minutes and test again.

5. Remove the bread from the oven and leave to cool in the tin.

6. Turn the load out, slice and serve with honey.

Grandmas Tip

If a couple of days left you actually have any of the loaf left and it is starting to go a little stale, try toasting it. This will bring out the banana flavor a little more and if you put a little honey on while still warm…hmmmmm :-)
