Simple Chicken Casserole
This chicken casserole is easy to make and there is not a lot of preparation required, a great meal for during the week on those cold evenings.
This recipe will serve 4
Ingredients
1 tablespoon of oil
30g/1oz of butter
8 chicken thighs
280g/10oz can of condensed cream of mushroom soup
225g.8oz of sliced button mushrooms
3 tablespoons of single cream
60ml/4 tablespoons of dry sherry
Method
1. Heat the oil and butter in a heavy-based frying pan, add the chicken pieces skin side down and cook until golden brown, then turn them and brown the other side.
2. Mix the can of soup, the sliced mushrooms, the cream and the sherry together.
3. Place the chicken in an ovenproof dish or casserole and pour the sauce over.
4. Cover and bake in a preheated oven to 190°C/375°F/Gas Mark 5 for 1¼-1½ hours or until the chicken is tender.
Grandma’s notes
Adding shallots to the sauce will give it more flavor. Serve with potatoes and seasonal vegetables.
